WSLF Budget Vegan Food Haul #1

Following a vegan diet, I often get the same question “but isn’t it expensive?”. As a university student, expenses are the bane of my life – last year I really struggled financially as following a fruit-based diet left me constantly penniless and hungry, which is one thing WSLF (Whole Starch Low Fat) has yet to do. So today I’m oddly excited to show you my weeks shopping, whether you are vegan or simply just curious, to show you how I eat healthily and lose weight all whilst on a budget.

I could have easily have spent less by choosing more budget friendly options, for example, ASDA’s basic potatoes and buying bulk in rice (not the microwaveable kind I have) however, these are just options I personally choose to buy purely out of taste.

As part of my food haul, I bought two large bags Marbelo potatoes (£2+ per pack), which offer a really great buttery texture and 2 bags of whole grain microwaveable brown rice (£1.50+ per pack).  I tend to bulk cook a bag of potatoes and reheat accordingly throughout the week, which makes making food so easy and quick. The Organic jumbo oats displayed are actually from Holland and Barrett which were on sale for 1.99 – this still comes under the £25 I paid for food for a week!

Another focus of my diet is rich in nutrients and also remarkably low in calories; Veggies! My main go to is Broccoli, which I like to cook as part of a Teriyaki dish, topped with slices of Sweet Pointed Peppers and chopped spring onion. Otherwise, I use it as a side, sprinkled with chilli flakes and a drizzle of fresh lime. For extra greens, I like to interchange between a variety of salads, such as Baby leaf and Rocket, and Bistro Salad, just to pack in a variety of nutrients quickly, and as an easy way to up my fibre to keep my digestion healthy. Vegetables are a some of the most budget-friendly options for your diet, regardless of whether you’re vegan or not, so top-up!

While fruit is in no way bad for you and is full of necessary nutrients, fruit intake is a somewhat limited portion of WSLF mostly because it just simply isn’t satiating. I often use fruit as a sweet-treat craving, which is why Watermelon (slices £1) is my go-to, or use Dried Cranberries (1.50+ per pack) to create a flavour explosion in my (otherwise) plain oatmeal. I’m also really addicted to my Twinings Cranberry & Rasberry Tea since I’m terrible at drinking water, this helps me stay hydrated through other sweeter means. Again, these are by no means necessities and you can definitely limit your costs here by opting for other fruits; apples and oranges for example.

    This is a great idea for a post! I’m always seeing cost come up as an issue as to why people feel they can’t go vegan and I’m always so confused because I don’t spend much at all on groceries! Might do a post like this soon 🙂

    I reckon you need to keep your eyes open for the good stuff that’s not too expensive! You can make it as expensive as you want but even a fresh market is really not so expensive. Love the post ✨
