I have finally made the transition to becoming self-hosted! Because of this, and all the admin work that has followed, I have had a massive overhaul on how my blog looks, works and most importantly, the content that it shows. I want to make content that appeals and sticks, and brings it back to what this blog is all about – quality content that invites everybody to make more cruelty-free options! So, to kick things off today, I’ve created a “What a Vegan Eats in a day” Post. Whether you’re intrigued meat-eater, a vegan looking for inspiration, or just simply interested, this post is here to cover all of that. Breakfast is the biggest opportunity to start, and stay, the day right. I like to follow a WSLF lifestyle which consists of eating whole foods for optimum nutrition intake and long-lasting satiation. My favourite breakfast at the moment is this berry crumble inspired oat bowl. For this, I cook frozen berries and apple chunks together to create a warm fruity base, plentiful of antioxidants and fibre. I then top this with 1 cup of cooked oats and cinnamon. For somebody who really hates porridge and oatmeal, this breakfast has changed the game for me to the point that I almost can’t live without it.
Lunch was not exactly ‘perfect’ today, nor is it Pinterest worthy, but I’m not following the WSLF lifestyle to the point – it’s more a foundation. I don’t usually eat sandwhiches for lunch, but I’ve been loving bread at the moment, especially soft bread rolls (cobs/ butties..) with Violife chedder cheese slices. This is the perfect convenience lunch for me when I’m feeling a little too lazy to cook. Note: If you are a transitioning vegan, I highly encourage you to check this brand out as their cheeses are a fantastic dupe for the ‘real thing’. They are available in Asda and Tesco, though I like to go to a vegan speciality shop where there is a larger selection of flavours to choose from.
Vegan Waggon Wheels – say what? If you’ve not heard of Waggon Wheels, they are a marshmallow, jam and biscuit type treat covered in chocolate. My childhood in a shell. I’ve been waiting to try these forever, and luckily a store near me (The Natural Food Co.) had some in stock. Even when I start the day off healthy, if I find a new product, It’s not before long before I’m in the checkout and ready to eat. Buying new vegan products is something really important to me because it’s necessary to support and encourage the rise of vegan products hitting the supermarket shelves. This is the only other time my ‘healthy’ lifestyle goes down the drain, but it’s always worth it.
Slightly more in line with the WSLF lifestyle, my dinner today consists of Sweet chilli tofu, a bed of rice and vegetables. This has been a favourite dinner of mine to eat for the past few months which I followed via a video on Facebook. Although it’s called sweet chilli, It’s a lot spicier than it is sweet, made savoury with a good dash of soy sauce. I also add garlic for an extra kick. Also, as an added note, the recipe calls for deep frying the tofu – I never use oil in any of my foods, so this is a step I skip. I just ensure the tofu I buy is Extra firm, organic and GM free – Tofoo is a great brand for this!
